Farmer's Delight

 

I prepared this, starting from Jamie Oliver's recipe of Summer Bubble and Squeak. I made it to my taste and with the side dish I like.
I named it that way, maybe because it has to do with the ingredients?... Possible. But I guess the main ingredient was Mylène Farmer's music.

Difficulty: medium.

Kitchen tools:
- cutting board;
- knife;
- steamer (or pot);
- frying pan (large - I started with a 28 cm one and finished with 30😂);
- potato masher;
- spatula;
- grater;
- cooking machine.

Duration: 1:30 h.

Serves: 5.

You need:
- 850 g of peeled potatoes;
- 200 g of frozen pea;
- 150 g of red cabbage (chopped);
- 50 g of white cabbage (chopped);
- 1 courgette (350 g) (chopped);
- 1 carrot (grated);
- 2 springs of rosemary;
- 6 tablespoons of extra virgin olive oil;
- some prickles;
- salt (to taste);
- pepper (to taste).


Method:
1. Get in the mood.
2. Thank the ingredients for giving you energy.
3. Peel the potatoes and place them in the first compartment of the steamer (or in a pot if you boil them).
4. Place the pea in the second compartment, in the dedicated tray (or in a pot if you boil it).


5. Let the pea steam / boil for 10 min. Set aside.
6. Let the potatoes steam for 30 min or boil for 15. Set aside. (If you cut them into quarters, you can reduce the steaming time by 15 min.)
7. Place a frying pan over the fire.
8. Grate the carrot.
9. Chop the cabbage.
10. Remove the edges of the courgette and chop it.
11. Add the rosemary over the courgette.


11. Add 4 tablespoons of olive oil in the pan.
12. Add the carrot, the cabbage and the courgette in the pan and fry them for 20 min.


13. When ready, turn the fire off and add the pea and the other 2 tablespoons of oil.


14. Add the potatoes and mash them gently together, but do not insist, adding salt and pepper to taste.


15. Fry them while mixing for 15 min at moderate fire.
16. After 15 min, increase the fire and let them fry without mixing for 5 min (depending on how brown do you want them to be; if you like them light brown, let them fry for 3 min).
17. Turn the fire off.
18. Take a large plate and place it over the pan. Flip it over.



19. Add some prickles around it.


20. We had them with some veggies and buckwheat.
