Raw Vegan Sushi

 



Inspired by the Japanese culture and listening to The Magical Art of Translation: From Haruki Murakami to Japan's Latest Storytellers”, I made this very simple recipe.

It is true that you can use for sushi just about everything you desire and it is not very complicated to mix different ingredients to get a tasty dish.


Difficulty: easy.


Kitchen tools:

- cutting board;

- knife (very sharp one);

- vegetable peeler;

- bowl;

- citrus squeezer;

- spatula;

- plate.


Duration: 45 min.

Serves: 2.


You need:


- 1 red bell pepper (julienne);

- 2 spring onions;

- 1 ripe avocado (julienne);

- 2 carrots (finely chopped);

- 5 cherry tomatoes (chopped);

- 2 springs of fresh parsley (chopped), you need three pieces, but they are longer than the sushi sheets;

- 1/2 a lemon juice;

- 3 sushi sheets;

- 5 drops of vinegar;

- salt (to taste).


Method:

1. Get in the mood for sushi.

2. Thank the ingredients for giving you energy.

3. Peel the carrots and peel thin slices of each one, on the length.


4. Cut the peeled slices julienne.


5. Chop the pieces as small as rice grains. Put them in a bowl.


6. Rinse the tomatoes, dry them, and finely chop them, but not as finely as you did with the carrots.


7. Add them over the carrots. Salt to taste, add the 5 drops of vinegar, and gently mix them together.


8. Rinse the bell pepper, dry it, remove the seeds and cut it julienne. Set aside, preserving 6 pieces (for decoration). 

9. Rinse the spring onion, dry it, remove the edges. Set aside.


10. Rinse, dry, and chop the parsley. Set aside.


11. Squeeze the lemon and place the juice in on little bowl.

12. Cut the avocado in half, remove the stone, peel it and cut it julienne (but not too thin).


13. Place the avocado in the lemon juice so it does not get brownish.

14. Place a sushi sheet on the cutting board.

15. Spread half of the carrots and tomatoes over the sheet and level it. Leave the edges on your side and the opposite side of the sushi story without carrots for 1 cm / 0.39 in.


16. Add some parsley.

17. Place one spring onion, red pepper and avocado from left to right towards you. One row each.


18. Roll the sheet, gently, but firmly, pressing down.

19. Remove the edges.


20. Cut the pieces at 2.5 cm / 0.98 in.

21. Place them om a plate.


22. Repeat the process with the other two sheets.

23. I made a raw cashew sauce for this.
