Green Lentil with Veggies

 


Finding my Santorini apron in the kitchen reminded me of a dish I liked a lot there, fava, which I tried at Mezzo Restaurant. Very good food, very nice staff.

Since I was too lazy to get out to buy some fava beans, I thought I could adapt it with some green lentils. It is almost as tasty as the original fava and it will not fill you up as fava does.

Difficulty: easy.

Kitchen tools:
- cutting board;
- knife;
- pan;
- cooking machine with oven;
- food processor;
- tablespoon;
- teaspoon;
- spatula;
- colander;
- citrus squeezer;
- baking paper;
- bowl.

Duration: 1 h (lentil soaking not included).

Serves: 3.

You need:
- 250 g of green lentil (soaked overnight);
- 2 onions (1 diced, 1 striped);
- 1 carrot (chopped);
- 2 cloves of garlic (chopped);
- 2 red peppers (chopped into large pieces);
- 3 tomatoes (quarters);
- 700 ml of vegetable stock;
- 12 tablespoons of olive oil;
- juice of one lemon;
- zest of one lemon;
- 1 teaspoon of honey;
- 3 bay leaves (do not crush them);
- a pinch of rosemary (I used powder, but fresh is better);
- parsley (chopped);
- salt and pepper to taste.


Method:
1. Get in the mood.
2. Thank the ingredients for giving you energy.

A. The lentil:
3. Soak the lentil overnight in plenty of water in a large bowl.
4. Drain it in a colander.


5. Dice one onion, chop the garlic and the carrot.


6. Place a pan over the fire and when hot, add 4 tablespoons of olive oil.
7. When the oil is hot enough, add the diced onion, the garlic and the carrot and stir until they are tender.



8. Add the vegetable stock, the bay leaves and the rosemary.


9. Cover it and simmer for 25 min.

B. The veggies:
10. Meanwhile, preheat the oven: gas 5 / 190° C / 375° F.
11. Cut the second onion in stripes, remove the seeds from the red peppers and chop them in large pieces, and quarter the tomatoes.
12. Place a baking paper over an oven tray, add 4 tablespoons of olive oil, a pinch of salt and make them 🤗 each other.


13. When the oven reached the desired temperature, place the tray in the oven and leave it there for 20 min, turning the veggies from time to time. After 20 min they should look like this:


14. Back to A, remove the bay leaves, place the lentil in a food processor and set it to the highest speed. Let it process for 3 to 5 min.


15. Place the paste in a bowl.
16. Add the last 4 tablespoons of olive oil, the lemon juice, the lemon zest, the teaspoon of honey, salt and pepper to taste and mix them together.


17. Add the lentil to a plate and place the veggies over, then spread the parsley.
