Vegan Omelette with Vegetables and Avocado

 



I do not like eggs. I haven't eaten one in almost a decade. But I was asked to prepare a fake omelette and since I had prepared the main ingredients a while before starting this blog, it was high time I put them to use.

So, I got in the mood, helped by Chris Spheeris, thanked the ingredients and got my hands dirty.

Difficulty: easy.

Kitchen tools:
- cutting board;
- knife;
- tablespoon;
- teaspoon;
- ladle;
- spatula;
- non stick pan;
- bowl;
- cooking machine.

Duration: 20-30 min.

Serves: 3.

You need:
- 150 chickpea flour (I made it myself in an electric coffee grinder);
- 3 tablespoons of flax seed flour (the same method);
- 1.5 teaspoons of baking soda;
- 1 teaspoon of black salt (I do not like this type of salt, due to sulfurous smell, but so was the order...);
- 1/2 teaspoon of turmeric powder;
- 360 ml of lukewarm water;
- olive oil;
- 2 red peppers (finely chopped);
- 1 onion (finely chopped);
- some cherry tomatoes (finely chopped and quarters);
- 2 ripe avocados;


- 6 tablespoons of dried inactive yeast;


- fresh basil leaves.

Method:
1. Get in the mood.
2. Thank the ingredients for giving you energy.
3. Get all the dry ingredients in a bowl and make them socialize up until there are no differences between them. 😉


4. Add the tepid water and finish the social bondage. No clumps allowed.


5. Finely chop the peppers, onion and some cherry tomatoes and get them together.


6. Place a nonstick pan on the fire and when hot, add a teaspoon of olive oil.
7. When hot, take a ladle of dough and spread it in the pan, as you do with the pancakes. You better use a spatula for this.


8. Let it bake until the dough is no longer sticky.
9. Spread 1/3 of vegetables over the fried dough.


10. Get one halve over the other and let it fry a little bit more.


11. When ready, place a plate over the pan, flip it over and... voilà.


12. Cut the avocado in half, remove the skin and the seed and cut the halves in 1 cm thick slices. Place them beside your omelette together with some basil leaves and some cherry tomato quarters.


13. Enjoy!
