Oven Zucchini on Soy Cream

 


It occurred to me that there are many things in this Samsara, the endless roaming through lives, (which also turned into a movie, by the way) to keep us repeating the cycle of life over and over again: love, childhood, children, tourism, etc., among them, yes, food. This recipe can be found in the above mentioned list of things that generate karma. Be advised!

Difficulty: easy.

Kitchen tools:
- cutting boards;
- knives;
- tablespoon;
- oven bake dish;
- oven;
- oven gloves;
- spatula (or large spoon);
- bowls;
- garlic mincer;
- plates.

Duration: 1.15 h.

Serves: 4.

You need:


- 2 medium sized zucchini (rinsed and sliced);
- 340 g of corn (canned);
- 230 g of smoked firm tofu (diced);
- 500 ml of soy cream (14% fat);
- 8 cloves of garlic (minced);
- a few sprigs of parsley (rinsed and chopped);
- 3 tablespoons of olive oil;
- 30 g of breadcrumbs;
- salt and pepper (to taste).

Method:
1. Get in the mood.
2. Thank the ingredients for giving you energy.
3. Remove the garlic skin and mince the cloves.
4. Pour the olive oil in the soy cream, add the garlic, season with salt and pepper. Get them together. Set aside.



5. Rinse and slice (as thick as you like) the zucchini. Set aside.


6. Rinse and chop the parsley. Set aside.


7. Preheat the oven: gas 5 / 190° C / 365° F.
8. Dice the tofu.


9. Add a layer of zucchini slices on your oven bake dish. Season with salt.


9. Add half of the corn, half of the parsley, and half of the tofu.



10. Repeat the process and on top of all add zucchini slices. Pour over the soy cream.


11. Spread the breadcrumbs over it.


12. Cover it.


13. Insert the dish in the oven, in the middle, for 50 min.
14. Remove the lid and bake it in the oven for another 10 min.


15. Enjoy!
