Sandwich - Asian Style

I have found this recipe somewhere on YouTube, but it was with ham, eggs, dairy cheese, and all. I adapted it to a vegan style dish while listening to ”Cosmic Conversation: The 2021 Distinguished Carl Sagan Lecture by Ann Druyan”.

Difficulty: medium.

Kitchen tools:
- cutting board;
- knife;
- oven;
- oven tray;
- baking paper;
- oven gloves;
- cooker;
- pan;
- tablespoon;
- garlic mincer;
- bowls.

Duration 1.15 h.

Serves: 3.

You need:

- 12 slices of bread (I used whole grain bread);
- 12 sliced of dairy free cheese;
- 6 vegetable slices;
- 1 big ripe avocado;
- 250 ml of soy cream;
- juice of half a lemon;
- 3 tomatoes (rinsed and sliced);
- 2 Kirby cucumbers (rinsed and sliced);
- 10 cloves of garlic (peeled and minced);
- a few sprigs of parsley (rinsed and chopped);
- 6 Shiitake mushroom caps (previously soaked, if needs be);
- 15 g of seaweed (soaked);
- 3 green onions;
- 3 tablespoons of olive oil;
- salt and pepper to taste.

Method:
1. Get in the mood.
2. Thank the ingredients for giving you energy.
3. Soak the mushrooms in plenty of water. (I soaked them overnight.)
4. Soak the seaweed.
Before:

After:

5. Peel and mince the garlic.
6. Add the soy cream to a bowl together with the salt, pepper, and the garlic. Mix.

7. Place a baking sheet of paper on an oven tray.
8. Soak six slices of bread only on one part and place them with the dry side on the tray. The garlic is supposed to remain on the bottom and it will be used subsequently.

9. Preheat the oven: gas 4 / 180° C / 350° C.
10. Place a slice of vegan cheese on each slice of bread.

11. Do the same with the vegetable slices.

12. Cover them with the other sliced of vegan cheese.

13. Using some tool (I used a shot glass) make a hole in the other slices of bread. Keep the pieces.

14. Soak the slices on one side and place the dry side over the vegan cheese.

15. Soak the bread pieces and place them on the opposite side of the hole.

16. Place the mushroom caps in the holes.

17. Add the remaining garlic on the caps.
18. Rinse and chop the parsley and add it on the sandwiches.

19. Place the tray in the oven for 30 min, then increase the fire to 5 / 190° C / 365° F for another 20 min.
20. Meanwhile, drain the seaweed, add a pan to the fire, place the weed in the pan, add some salt and dry it.

21. Add the olive oil and fry it for 5 min.
22. Rinse and slice the tomatoes and the cucumbers.

23. Squeeze the lemon.
24. Cut the avocado in three pieces, remove the stone, peel it and cover the pieces with lemon juice.

25. Place the veggies on the plates, add the avocado and fill it with the seaweed.

26. When the sandwiches are done, add them to the plate.

27. Enjoy!
