Cornbread Burgers
”What's this crap suppose to be?
Cornbread, I think.
It's good for you, boy. Eat it.”
Do you remember the dialogue from 1986 ”Aliens”? Well, I do, and I thought about changing the bad fame of cornbread.
It is not entirely corn bread. It is half corn and half whole grain wheat flour together with some other ”alien” ingredients.
It took a lot to make it, especially because I had to wait for the dough to settle, so I had time to read about 15 pages of Ingo Swann's ”Remote Viewing - The Real Story”.
Difficulty: difficult.

- pan;
- spatula;

- pot;
- oven tray;
- baking paper;
- tablespoon;
- colander;
- basting brush;
- paper towels.
Duration: 2 h.
Serves: six pieces.
You need:
A. For the cornbread:
- 250 g corn flour;
- 250 g whole wheat flour;
- 2 tablespoons of dry basil;
- 150 g of vegan cheese (grated);
- 2 tablespoons of honey;
- 7 g of dry active yeast;
- 2 spring onions (chopped);
- 9 leaves of ramson / wild garlic / Allium ursinum (chopped);
- 300 ml of tepid water;
- water to cover and boil the soy meat;
- 3 tablespoons of seeds mix (flax, sesame, sunflower, pumpkin);
- 4 tablespoons of olive oil;
- 2 tablespoons of poppy seeds;
- salt (to taste);
B. For the burger:
- half a red bell pepper (julienne);
- 3 large leaves of lettuce (chopped);
- 1 red onion (striped);
- 6 pieces of dry soy... meat;
- 50 g of vegan cheese;
- any dressing you prefer (I used the one from the Japanese Style Rice).
Method:
1. Get in the mood.
2. Thank the ingredients for giving you energy.
3. Place a pan over a moderate fire and add the 2 tablespoons of olive oil. Let it get hot.
4. Chop the spring onions and the ramson.
5. Add them to the pan and cook them for about ten minutes. Set aside.
6. Grate the cheese.
7. In a large bowl, add the corn and the whole grain flower, the seeds mix, the onion and ramson, salt to taste and mix them.
8. Make a hole in the middle, add the yeast and then some tepid water over the east.
9. Add 1 tablespoon of honey, the dry basil, and 50 g of vegan cheese.
10. Knead it with the rest of the tepid water.
11. Cover it with something and let it rest for an hour.
12. Meanwhile, add some water to a pot, season it with salt and bring it to the boil.
13. Add the soy meat and boil it for 3 minutes.
14. Turn the fire off, cover them and let them rest there for 10 min. When the time is up, dry them in a colander.
15. Meanwhile, cut the red bell pepper (julienne), the red onion (stripes) and chop the lettuce. Set them aside separately.
16. When the hour for the dough is up, preheat the oven: 4 / 180 C / 350 F.
17. Pour some flour over your working space and place the dough over it.
18. Try to make six equal portions out of it.
19. Place a sheet of baking paper on an oven tray and pour some flour over it.
20. Make six buns out of each piece of dough and place them in the tray.
21. Flat them, but do not insist too much.
22. Cut then lengthwise, distance the parts a little, and place 100 g of cheese in the cut.
23. In a little bowl, add the other tablespoon of honey and two tablespoons of water. Make them one and the same, as are Sauron and his ring of power.
24. Using a basting brush, spread it over the buns and then add the poppy seeds to them.
25. Place them in the oven for 25 - 30 min.
26. Meanwhile, place a nonstick frying pan over a moderate fire, add 2 tablespoons of olive oil and let them get hot.
27. Hand squeeze the soy meat pieces (to remove the remaining water) and fry them on each side until they get brownish.
28. Remove them and let them dry on some paper towels to absorb the oil.
29. When the buns are baked, remove them, let them cool down, cut them horizontally, and add the lettuce, onion, pepper, the soy meat and some cheese over the bottom piece of the bun.
30. Place the other part of the bun over. You can either use some sticks, or not.
31. You may add some dressing to your taste.
