Quinoa Salad
It is a very simple recipe and I had no time to think about anything else, but my thoughts.
Difficulty: easy.
Kitchen tools:
- cutting board;
- knife;
- bowl;
- pot;
- cooking machine;
- citrus squeezer;
- tablespoon;
- grater.
Duration: 30 min.
Serves: 3.
You need:
- 200 g quinoa;
- 500 ml of water;
- juice of one lemon;
- 1 avocado (diced);
- 2 red onions, or 1 large one (diced);
- some sprigs of parsley (chopped);
- 1 clove of garlic (grated);
- 285 g of sweet corn (canned);
- 3 tablespoons of olive oil;
- a pinch of coriander;
- salt (to taste).
Method:
1. Get in the mood.
2. Thank the ingredients for giving you energy.
3. Place a pot over a medium fire, add the water and the quinoa and bring it to the boil.
4. Cover it, reduce the fire and simmer it for 15 min.
5. Meanwhile, chop the parsley and the onion. Set aside.
6. Grate the garlic. Set aside.
7. Squeeze the lemon. Set aside.
8. Dice the avocado.
9. Place it in a bowl and pour some lemon juice over it to prevent it from getting brownish.
10. When the 15 minutes of simmering have passed, turn the fire off and let the quinoa absorb all the water (around 15 min).
15. When done, place it in a large bowl.
16. Add the onion, the parsley, the avocado, the corn, a pinch of coriander, the clove of garlic, the olive oil and the lemon juice, saving some avocado, onion and parsley for decoration.
17. Add salt to taste and get them together.
18. To give it a shape, take a small, but not very small bowl, fill it with some salad pressing towards the bottom, place a plate over the bowl and flip it over.
19. You may consider some bread. I made some ramson (wild garlic) buns.
