Gluten Free Spinach Pancakes with Avocado and Vegetables

 


I believe it is easier to love forever, than to love daily. But I love this dish both ways.
It is inspired by a recipe of Jamie Oliver's from ”Veg”. I made it vegan style.

Difficulty: medium.

Kitchen tools:
- cutting board;
- knife;
- citrus squeezer;
- cooking machine;
- non-stick frying pan;
- blender;
- bowl;
- tablespoon.

Duration: 45 min.

Serves: 6 portions.

You need:

- 200 g of spinach (chopped);
- 6 spring onions (chopped);
- 300 g of cherry tomatoes (quarters);
- some sprigs of parsley (to your taste) (chopped);
- 1 ripe avocado (sliced);
- 2 cherry belle radishes (sliced);
- juice of one lemon (save slices for decoration);
- 250 g of gluten free self raising flour;
- 600 ml of soy drink;
- 3 tablespoons of extra virgin olive oil;
- chili dressing (to taste);
- a pinch of pepper;
- salt (to taste).

Method:
1. Get in the mood.
2. Thank the ingredients for giving you energy and Jamie for the recipe.
3. Rinse the vegetables, dry them and chop them: the onion, the parsley, and half of the spinach.



4. Slice the radishes and quarter the tomatoes.



5. Squeeze the lemon, saving as many slices as you like for decoration.
6. Place the veggies in a bowl, pour the 3/4 of the lemon juice over, pour the 3 tablespoons of olive oil, season with salt and pepper, mix, and set aside.


7. Pour the soy drink into your blender, add the other half of the spinach and liquefy them.


8. Add the flour, salt to taste, and mix.


9. Place a non-stick frying pan over a moderate fire and when hot enough pour some dough into the pan, neither too thick, nor too thin.


10. Cook it on one side only until it gets a little brownish.
11. Repeat the process until the dough is finished.
12. Half the avocado lengthwise, remove the skin and the seed, slice it and add it to a bowl pouring the rest of the lemon juice over the avocado.


13. Place one pancake on a plate, add some tablespoons of veggies, 3 slices of avocado, some chili dressing on 3/4 of the pancake and fold the 1/4 of it over. Place a slice of lemon near. Add some dashes of chili dressing.
