Red Beans

 


Red beans that, in fact, are black, as Red from ”The Shawshank Redemption”, the film, was black. The taste of this recipe is sweet, like the ending of the film I mentioned, not like the Stephen King's novella, that is a little bitter and uncertain.
The recipe is from Jamie Oliver's „Veg”. I changed it just a little bit.

Difficulty: medium.

Kitchen tools:
- cutting board;
- knife;
- bowl;
- oven-proof pan;
- pan (or bread toaster);
- cooker;
- oven;
- oven gloves;
- grater;
- vegetable peeler (or knife);
- blender;
- tablespoon;
- teaspoon.

Duration: 1.20 h.

Serves: 4.

You need:


- 3 x 400 g cans of red beans (juice included);
- 500 g of smoked red pepper (juice included - chopped);
- 2 onions (chopped);
- 4 cloves of garlic (chopped);
- 1 carrot (chopped);
- 500 g of tomatoes (chopped);
- 1 tablespoon of vinegar;
- 130 g of vegan cheddar;
- 4 tablespoons of olive oil;
- 1 teaspoon of sweet paprika powder;
- 2 teaspoons of rosemary (better fresh);
- five slices of bread (cut into bite pieces);


- a pinch of hot chilly flakes;
- salt and pepper to taste.

Method:
1. Get in the mood.
2. Thank the ingredients for giving you energy.
3. Peel the carrot and chop it.


4. Peel the garlic and the onion and chop them.


5. Place the pan over the fire, pour the olive oil, and, when hot, add the carrot, garlic, onion, paprika, and the vinegar.


6. Fry them for 10 min, stirring from time to time or until they get tender and a little caramelized.


7. Meanwhile, rinse and chop the tomatoes, chop the smoked red pepper.



8. Add them to the pan, season it with salt, pepper and the pinch of hot chilly flakes.


9. Fry them for about 5 min.
10. Meanwhile, cut the bread into bite pieces or quarters. Set aside.


11. Place the vegetables in a blender and liquefy them. Add them back to the pan.

13. Add the beans to the pan as well, juice included. Simmer for 20 min or until the liquid is reduced to your taste.
14. Meanwhile, place another pan on a moderate fire and toast the bread. Set aside.


15. Preheat the oven: gas 5 / 190° C / 365° F.
16. Grate the cheddar.
17. Add it to the pan.


18. Add the bread and gently press each piece down. They should not be fully covered with the juice. Add the rosemary.


19. Insert the pan in the oven for 20 min.
