Almost Vegan Pancakes
I couldn't get Trip's retort from ”Breaking the Ice” (first season of ”Enterprise”) out of my mind: ”It may be not be good for the body, but it sure is good for the soul”, so I prepared something good for the soul.
I made this episode of pancakes listening to ”North Star” commentary by David A. Goodman and Chris Black and the next one with commentary by Michael Demeritt. Not that there is a relation between the space cowboys and my pancakes, but maybe there is...
And since I am not 100% vegan, yes, I used honey.
Difficulty: easy.
Kitchen tools:
- pot;
- cooking machine;
- spatula;
- nonstick pan;
- whisk;
- citrus squeezer;
- grater;
- ladle.
Duration: 2 h (but it depends on how many you would like to bake).
You need...
Ingredients for more than 30 pancakes:
- all-purpose wheat flour (2 cups - I used a 350 ml cup);
- whole wheat flour (2 cups);
- 6 cups of sparkling water (the fizzier, the better);
- 4 tablespoons of honey;
- the juice of one orange;
- 4 tablespoons of coconut flakes;- 3 tablespoons of poppy seeds;
- 50 ml of sunflower oil;
- a pinch of salt;
- blueberry jam (or any other jam);
- orange zest for decoration.
You can use a smaller cup. Thus you will diminish the amount of time and the number of pancakes. If you do this, reduce the amount of coconut flakes and poppy seeds.
Method:
1. Thank the ingredients and the bees for giving you energy.
2. Get in the mood.
3. Pour the flour in a large pot.
4. Add the sparkling water and mix them until there are no more lumps.
5. Add honey and mix.
6. Squeeze the orange and get some zest.
7. Add the salt, coconut flakes, poppy seeds and orange juice and mix until there are no more lumps of any kind.
8. Place the nonstick pan on the fire and let it heat.
9. When it is done, reduce the fire. (My gas cooking machine has 7 sets for the intensity of fire. For these pancakes I keep it at 3.)
10. Take an almost full ladle of dough and spread it over the heated pan.
11. When the edge begins to raise, it's time to flip it over. You can either use a spatula (rubber or wooden one) or you just use your fingers, if you are fast enough.
