I started making this listening to Anton Petrov and finished it with Beethoven, a lot of Beethoven.
Difficulty: medium to high.
Kitchen tools:
- cutting board;
- knife;
- cooking machine;
- oven;
- frying pan;
- steamer (optional) or pot;
- oven tray;
- potato masher (or fork);
- pot (for mashing the potatoes);
- baking paper.
Duration: 1h - 1:30h.
You need...
Ingredients for four portions:
For the potato roll:
1. 1 kg of peeled potatoes (I got it out of 1.400 g of potatoes);
2. 250 g of chickpea (either you prepare it or canned - drained);
3. 450 g of broccoli (I used frozen broccoli);
4. 50 ml of Soy Drink - hot;
5. salt - to taste;
6. parsley - for decoration.
For the mushrooms:
1. 500 g of mushrooms - washed;
2. 1 large onion - chopped;
3. 1 red pepper - chopped;
4. 5 tablespoons of olive oil;
5. salt - to taste;
6. black pepper - to taste.
Method:
1. It won't get tasty if you are not in the mood.
2. Thank the ingredients for giving you all energy.
Potato roll:
1. Place the broccoli into the first compartment of the steamer. (If you do not have one, just boil it with for 10 - 15 min.)
2. Chop the potatoes into pieces as you prepare them for the mash potatoes. (Either in the steamer, or on a pot.)
3. Place them in the second compartment of the steamer and cover them.
4. Set the timer for 25 min.
Meanwhile... the mushrooms:
1. Chop the onion, the red pepper and the mushrooms into big chunks.
2. Place a frying pan over the gas and when it is ready to use, pour the olive oil.
3. When it is hot enough, add the onion and reduce the gas. Stir regularly until the onion becomes almost translucent.
4. Add the red pepper and continue stirring for ten minutes.
5. Add the mushrooms and increase the gas.
6. When they begin to leave behind the water, reduce the gas to a half and add salt and pepper. Continue stirring until there is no more water in the pan. Set aside.
Preheat the oven: gas 5 / 190° C / 375° F
Coming back to the potatoes and broccoli...
5. Mash the potatoes adding the hot Soy Drink and salt to taste. 6. Add most of the chickpeas and convince them to get together.
7. On baking paper, pour some oil and then place the mashed potatoes, spreading it even.
8. Mash the broccoli, adding some salt to taste and then place it evenly over the potatoes.
9. Roll everything over, keeping the paper outside the roll.
10. Place it on an oven tray, add the remaining chickpeas and bake them for 15 min.
11. If you can, bake it on the top side as well.
Or you can use a hand torch to finish the job. (Beware not to set the baking paper on fire!)
12. Place it on a plate, remove the paper from underneath the roll and add the mushrooms to each side.
13. Add the remaining chickpea and the parsley.
14. Enjoy!
