My Vegan Quesadilla


I can easily make it when something quick is needed. It has vegetables, it has colour, it is tasty and I usually serve it with chickpea hummus, but today I have some home made tofu.

Like every dish, it has a secret. Mine is either Camille Saint-Saëns (Introduction et Rondo Capriccioso is my favourite) or Neil deGrasse Tyson's Star Talk with Chuck Nice.

Difficulty: way too easy.

Kitchen tools:
- cutting board;
- knife;
- cooking machine (mine is on gas);
- frying pan;
- a plate the size of the pan;
- grater.

Duration: 20 - 30 min

You need...

Ingredients for four portions:
1. 8 Lebanese pita bread.
2. 2 carrots (coarsely grated).
3. 1 onion (chopped).
4. Parsley - as much as you want (chopped).
5. 2 red peppers (chopped).
6. Vegan cheese - as much as you want (chopped). I use 150 g.



Method:
1. Get in the mood.
2. Thank the ingredients for giving you energy.
3. Peel the carrots and grate them.
4. Peel the onion (well, maybe half the meaning in urban dictionary, if you like...) and chop it.
5. Chop the parsley.
6. Clean the peppers, remove the seeds and chop them.
7. On a different cutting board, chop the vegan cheese.




8. Bring them together and gently mix them.




9. Place a pan over the fire and reduce the heat to a half once the pan is hot.
10. Place one piece of pita into the pan.
11. Add 1/4 of vegan mix on the pita, leaving 1 cm of pita edge uncovered. (It prevents the veggies from getting out of the pita into the pan.)




12. Place another pita over the top and gently press it.




13. Leave it for a couple of minutes or as long as you desire.
14. Turn it over so you can bake the other part as well. (I take a plate and place it over the pita, flip the pan over and then place the pita up side down back into the pan.)




15. Leave it for another couple of minutes.
16. Place it on a plate and cut it into pieces.
